Southwest chicken wraps


Today was SUUUPER busy! What the heck am I talking about? Every day is a busy day with a four month old. Today, however, was even more so than normal; haircut, work, deliveries, taking care of Levi. Because of all of this craziness, dinner was sort of a last minute, I need something quick kinda meal. I found this recipe on pinterest, and had it on my calendar to have this last Friday, but we ended up going out of town J.

When I read the recipe here, I thought I’d put my own spin on it. (That means it’s easier and less ingredients!)
So here goes:

Ingredients:

6 Large Tortillas
1 can of black beans
1 package of Knorr Taco Rice
1 cup Shredded Cheddar Cheese
1/2 sliced green bell pepper
1/2 cup or sour cream
1 large chicken breast
1 tsp chili powder
1 tsp garlic salt

Season chicken breast with chili powder and garlic salt. While chicken is cooking, follow directions on Knorr rice. When chicken is no longer pink, cut into bite size pieces. Place chicken in a mixing bowl with drained and rinsed black beans. Put everything except Tortillas, cheese and sourcream (you only need one cup of the rice) in bowl. Mix well. Spread sourcream on tortilla and sprinkle cheese. Place the chicken and rice mixture in the center of tortilla. Fold tortilla so there are no open ends. Spray a frying pan with no-stick cooking spray and brown the toritilla on each side. Serve with leftover rice.

This dinner was a hit with my hubby and I hope that your family will like it, too! J

Catching up


We have a lot of catching up to do. Let’s start with September.

In September I started my own business called Stitch Savvy. It’s an embroidery business that speacializes in monogramming, appliqués and embroidery. I personalize things from bibs to business shirts and anything in between. I really enjoy what I do because not only is it fun, but it allows me to keep Levi with me. Yep, you guessed it, I had my little boy and that takes us right into October.
                    

On October 12th I had the scariest day of my life that turned out to be the best. I was filling some embroidery orders and I felt a “bubble pop” as I like to call it. I thought that my water had broken, but when I went to the bathroom to check I was bleeding VERY badly. I called my mom in there and we immediately got in the car to head the hospital. As I was on the way I of course called Stewart to tell him what was going on and to come meet me and then called the doctor. While on the phone with the doctor they told me to come into the office first, which caught me by surprise. When I arrived at the office I was waiting for them to call me back. When Stewart arrived, he was ticked that I wasn’t already in the exam room so he decided to do something about it, he opened the door and said “My wife is pregnant and bleeding, what are YOU going to do about it?” Needless to say, I went straight back. Dr. Cheek checked me and listened for he baby’s heart beat then decided to send me to the hospital. When I arrived at the hospital I went straight up to the Labor and Delivery floor and they sent me back to get hooked up to all those beeping machines. Meanwhile I’m still bleeding like crazy. Dr. Cheek came and we went into a delivery room I wasn’t even in there for 2 minutes before he made the decision to do an emergency c-section. Little did I know they were starting to lose Levi’s heart beat. I was taken in for the surgery and at 5:51 pm on Wednesday, October 12th, 2011, Levi Allen McWhorter was born weighing 4lbs. 5oz. and measuring 17 ¼ inches long. I woke up around 8 pm to find out that Levi was in the special care unit, breathing on his own and doing okay. Later I found out that when he was born he was not breathing, his heart was not beating and it wasn’t looking good. Then after a few minutes he gagged and started breathing on his own. Levi stayed in the special care unit for four days and came home the same day I did. That precious baby boy is sleeping in his room right now because of the miracle that God performed that night. I thank God every day for answering the prayers that I prayed continuously after seeing the blood that day. Never will I forget how scared I was that I was going to lose my baby boy that I had never even laid eyes upon, but our God is a faithful and loving God that never ceases to amaze me. Levi’s testimony has already touched many lives and I know it will continue to do so through out his life.

In November Stewart and I were still adjusting to being new parents. On November 7th Levi was baptized at The Ridge. We enjoyed Thanksgiving dinner with my family this year. That was about it for November. In December Levi met his cousins Avery and Paisley for the first time, celebrated his first Christmas, made his first road trip to North Alabama, and rang in the new year fast asleep. In January things slowed down and we have been able to get into a real routine. Levis is sleeping pretty good at night, only waking up once or twice for his paci.

That covers the big things since the last time we chatted, but I do have some recipes and photos to come J

Calzones


Calzones make me happy and now they can make you happy, too! 
To me the best part about these calzones is that you can personalize them any way you like. You could add mushrooms, black olives, bell peppers, chicken, and if you are feeling really CRAZY you could even use pesto sauce instead of tomato sauce! But to make the calzones I made, these are the ingredients and directions:

Ingredients:
1 small can of tomato sauce
1 cup of shredded mozzarella cheese
½ cup of cooked sausage ( I brown this, but leave it in big chunks)
½ cup of pepperoni
1 refrigerated thin pizza crust (in the section with the biscuits)
2 tablespoons of Italian seasoning (optional)

Directions:
Preheat oven according to package  (I think it’s 400)
Spray your largest baking sheet with non-stick cooking spray
Roll out the pizza dough on to the baking sheet and cut it in half.
Spread enough tomato sauce to cover the pizza crust- leave about ½ inch of the pizza crust bare all the way around the edge.
Spread the cheese to cover the sauce.
Spread desired amount of pepperoni’s and sausage onto each half of the pizza crust. ** Only put meat and veggies on half of the half of pizza crust**
Fold the meatless part of your pizza crust over the part that has meat on it.
Seal edges with a fork.
Sprinkle Italian seasoning on the tops.
Bake for 10 minutes, take it out and enjoy! J

** You use VERY little of the tomato sauce, so what you can do is put the left over sauce in a freezer bag, pop in the freezer, and use it next time you need it! L

13 on Thursday


I have been trying to figure out what my next blog post would be about for a while now, and thanks to my sweet friend Rebecca over at The Taff's, I now have a fabulous idea! I am going to start posting 13 on Thursday. So here goes:

1. Stewart & my parents have been out of town this week, so my grandmother (Gram) has been staying over here, so neither of us would be lonely. J My parents were on a cruise, and Stewart is gone for work, and I’m ready for them ALL to come back!!!!

2. I had a doctor’s appointment this morning and while I was sitting there waiting to see the doctor, Levi decided it would be fun to jump around like he was on a moon walk. It made my entire stomach shake. Pretty cool!

3. I am completely exhausted;- I think it’s due to the third trimester.

4.  As of today, only 67 days until Levi’s due date!

5. Yesterday we got some exciting news, my brother-in-law and sister-in-law, who had twin girls in January, are expecting again! They are due in early April.

6. On Tuesday I went to dinner with two girlfriends, and the girls night out was MUCH needed!

7. I need to go to the grocery store REALLLLLLY bad.

8. I have officially done ALL of our laundry! Feels great! :)

9. I haven’t made my bed ALL week, Stewart normally does that, and it just doesn’t feel right for me to do it. HeHe.

10. Since my parents were out of town all week, I had to run the business! Talk about exhausting!

11. Last Friday we went to LaGrange to pick up our glider, that was a gift from my in-laws J. I can’t wait for Stewart to put it together!

12. Did I mention I’m ready for Stewart to come home???

13. I think I may add a late afternoon nap to this day.

Best job in the world :)


It’s official;; I have the most wonderful job in the ENTIRE world! While I did like working with the kids at my previous job, this job is even better! That’s because it allows me to come in when I want, leave when I want and not be TOTALLY exhausted when I get home. I even have the most wonderful employers a girl (especially a pregnant girl) could ask for. Yep, you guessed it;; I am working with my parents at their landscape business. Yes, that’s right landscape, but no worries I am not on a mower. I am helping my mom out in the office. But the best part of this is that in about 3 weeks we will have started a monogramming business also! I will be running that business which will allow me to keep Levi with me ( I think this whole idea was partly so that my parents could see him everyday). Stewart and I have been super blessed to have this opportunity available and we thank God for it daily. Pretty soon I will be able to meet all of your monogramming needs, so send them this way!

Baby Shower

There are always a lot of things that get me excited about having this precious baby boy, but today was different. Today we helped host a baby shower for a couple at our church who will be welcoming in a baby girl in October (she is three weeks ahead of me). At this shower today, the mom-to-be received a TON of pink gifts(which is totally expected), but for some reason it made me even more excited about having a little boy. Now don't get me wrong, I do want a little girl someday, but it's almost like while she was opening all of her pink gifts, God spoke to me and said, "Someday you will have all the pink to open too, but Levi is yours for a reason, so enjoy the blue and take care of him for me." I just kind of froze for a moment, and thanked God for this baby boy, as I have many times before, but this time it was different. I know God is trusting Stewart and I with Levi for a reason, and we will know why one day, but right now it's just neat to imagine what that reason might be. So little Levi, we don't even know you yet, but we're thankful for you. :)
